Ingredients for Chop Chop Salad
- 1 red grapefruit
- 1 chopped orange bell pepper
- chopped cucumber
- 1 cup of peeled jicama
- 2 slice tomato
- 2 green onions sliced
- 1/4 cup fresh cilantro
Preparation:
- Cut a slice from the bottom and top of the grapefruit. Stand the grapefruit up on a work surface, slice off the peel and white pith in vertical slices, and expose the fruit segments (cut slightly into the fruit part).
- Use your knife to slice between the exposed white membranes tenderly, and loosen the grapefruit segments into a bowl. Pick out seeds, if any.
- Place the grapefruit sections, orange bell pepper, cucumber, jicama, tomato, and cilantro into a salad bowl, green onions, and toss smoothly to mix.
